When you think of raw fish what is the first word that comes to mind? If you answered sushi we don’t blame you. Most people are aware of sushi, or sashimi, (which is raw fish without the rice) but how about crudo? This is the Italian take on raw fish and is creating quite a buzz in the food world. Crudo has been served in fishing towns throughout Italy for decades but only recently has drawn the attention of American food lovers. No wasabi is needed as crudo is commonly served with olive oil, lemon juice and salt which provide it with its own little zing.
