Waffle French Toast with Chorizo & Cheese

Makes 4 Servings


For the French Toast:

  • 2 eggs
  • 1 teaspoon Tajin seasoning
  • 1/2 cup whole milk
  • 8 slices bread (Brioche, Challah, Sourdough)
  • 8 oz. Chorizo sausage, cooked
  • 8 oz. Queso Fresco (fresh crumbling cheese)
  • Cilantro, chopped
  • Chipotle Maple Syrup

For the Chipotle Maple Syrup:

  • 1 cup maple syrup
  • 2 chipotle peppers
  • 4 tablespoons salted butter, melted


For the Chipotle Maple Syrup:

  1. Blend the maple syrup with butter and Chipotle peppers in a blender.

For the French Toast:

  1. Beat egg, vanilla and Tajin in shallow dish. Stir in milk.
  2. Dip bread in egg mixture, turning to coat both sides evenly.
  3. Place bread slices one at a time in heated waffle iron. Cook until golden brown and crispy.
  4. Top with chorizo, Queso Fresco, cilantro.
  5. Drizzle with Chipotle Maple Syrup.
