In the past five years, sales of Greek yogurt have increased an astounding 2500%. With sales reaching $1.5 billion this year alone, Business Insider calls it “one of the hottest-growing food categories of all time.”
So what’s the difference between yogurt and Greek yogurt? Both traditional yogurt and Greek yogurt are made from milk that has had healthy bacteria added to it—causing it to ferment and have a tangy taste. Traditional yogurt is strained twice through cheesecloth, which removes liquid milk whey. Greek yogurt has been strained three times, giving it a thicker consistency.
Why the sudden growth in sales? Health. There has been a desire in the U.S. for more natural and nutritious foods. Greek yogurt contains less sugar and more protein—which makes it more filling, more nutritious and possibly worth the extra $1 you might spend on a single serving.
